When I don't know what to make for dinner...I make veggie quesadillas with secret chipotle aioli sauce. This sauce elevates it and it seems like a special meal when it really is THE fastest and easiest meal.
Some of the veggies I use are:
A mix of onion, zucchini, squash, bell peppers, roasted red peppers, black beans (sometimes) and corn sautéd then I put in the tortilla and Mexican mix of cheese on bottom and then top.
Secret Sauce INGREDIENTS:
¼ cup mayonnaise
¼ cup yogurt
1 clove garlic small
1 tablespoon chipotle pepper
1 teaspoon fresh lime juice
¼ teaspoon onion powder
⅛ teaspoon cumin
Pinch of salt
INSTRUCTIONS:
Finely chop the chipotle pepper then set it aside (if you do not have this, you can use Cayenne pepper, Sriracha, Chipotle powder or Hot chili powder)
Take a pestle and mortar and press garlic with a pinch of salt into a paste
Put mayonnaise and yogurt into a bowl. Then add the chipotle pepper, onion powder, cumin, and lime juice
Stir to combine all the ingredients into a creamy and soft sauce. Taste and add more chipotle if you like your sauce spicy
