When I don't know what to make for dinner...I make veggie quesadillas with secret chipotle aioli sauce. This sauce elevates it and it seems like a special meal when it really is THE fastest and easiest meal.

Some of the veggies I use are:

A mix of onion, zucchini, squash, bell peppers, roasted red peppers, black beans (sometimes) and corn sautéd then I put in the tortilla and Mexican mix of cheese on bottom and then top.


  • ¼ cup mayonnaise

  • ¼ cup yogurt

  • 1 clove garlic small

  • 1 tablespoon chipotle pepper

  • 1 teaspoon fresh lime juice

  • ¼ teaspoon onion powder

  • ⅛ teaspoon cumin

  • Pinch of salt


  1. Finely chop the chipotle pepper then set it aside (if you do not have this, you can use Cayenne pepper, Sriracha, Chipotle powder or Hot chili powder)

  2. Take a pestle and mortar and press garlic with a pinch of salt into a paste

  3. Put mayonnaise and yogurt into a bowl. Then add the chipotle pepper, onion powder, cumin, and lime juice

  4. Stir to combine all the ingredients into a creamy and soft sauce. Taste and add more chipotle if you like your sauce spicy
